I decided to use a track saw instead of the table saw, since working with large sheets can be tricky in my small workshop. Use foam insulation panels to support the laminate sheet and prevent the blade from cutting through the workbench. Clamp everything down so it doesn't move as you cut.

Inject acetone into the crack. Wait 3 minutes for the acetone to loosen the glue and then tap the putty knife deeper into the crack. Pry the laminate loose with the knife as the glue loosens. Pour the acetone into a bottle with a narrow tip so that you can squirt it where you need it. Acetone dissolves contact cement on contact, but the older the glue, the longer it will take, usually not more than about 5 minutes. The glue will begin to get super sticky, and then lose most of its holding properties. Pull the laminate off with your fingers as it loosens. Squirt more acetone behind the laminate as needed to soften the glue. Use the putty knife to cut loose strands of glue. Continue pulling and and using the glue and knife as needed until the laminate comes completely off the side of the cabinet.
Measure the side of the cabinet and add 1 inch to both measurements. For example, if the side of the cabinet measures 22-by-32 inches, your laminate measurement should be 23-by-33 inches. Cut a new piece of laminate to the measurement using a table saw, or if you don't have a table saw you can order a new piece of laminate already cut to size. If you are only replacing one piece, it's fine to pay a little extra and get it cut to size. If you are replacing multiple pieces, purchase the laminate in sheets and cut them yourself on a table saw to save money.
Install a 3/8-inch flush cutting laminate bit into a router. This type of bit will cut only the laminate overhanging the edge of the cabinet. There is a small bearing on the end of the bit that rides along the side of the cabinet as it trims the thin edge of the laminate flush with the surface of the cabinet. If the router won't fit into a tight corner, stop routing and use a file to finish trimming the laminate where the bit will not fit. When you complete the routing, sand the edge of the laminate lightly with a folded piece of 180-grit sandpaper.
